Baking Galore





Growing up in such a big family has many, many advantages, but sometimes I find it has drawbacks. All of my older sisters are amazing cooks and whenever Mom needs help with dinner or dessert, the job is given to one of them. Thus, I am left with granted, more experience than the average teenager, but compared to my sisters I'm quite devoid of baking/cooking skills. I've been wanting to put this right for while now and last Monday I jump started that process by making some pretty fabulous Orange-Chocolate Chip Cookies. Now I just need to start cooking. We'll see how that goes...


1/2 cup butter
1 1/4 cups firmly packed brown sugar
2 squares (1 ounce each) unsweetened chocolate, sweetened and cooled
1 egg
2 tablespoons orange juice concentrate
1 teaspoon vanilla
2 tablespoons grated orange peel
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup blanched slivered almonds

1. Preheat oven at 375F. Combine butter,brown sugar, and melted chocolate in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg, concentrate, peel and vanilla.
2. Combine flour, baking soda and salt. Mix into creamed mixture at low speed until well blended. Stir in chocolate chips and nuts.
3. Drop tablespoonfuls of dough two inches apart onto an ungreased cookie sheet.
4. Bake seven to nine minutes or until set. Cool two minutes on cookie sheet. Remove to cooling rack. Makes about 3 1/2 dozen cookies.
5. STUFF YOUR FACE.

  1. I don't see any blanched almonds in that pile of ingredients. I, your more experienced cook of an older sister, should have made these. They would have been better. Or at least crunchier.

  3. Haha! Thanks Lisa, we miss you back! I'm forever begging my family to comment on my blog and Cheri is usually the one who ends up listening to me; problem is, she always really annoying. :)
